From 1989 to 1996 Susan worked at acclaimed restaurants in Paris, Cork, London and Sydney including Marco-Pierre Whites 3 & 2 star Michelin Restaurants, Harvey’s and The Canteen; with Micheal Caine, as well as The Bathers Pavilion Balmoral, Sydney.
Susan started working in nursing in 2012. She has been as a registered nurse since 2018, working in the central west regional hospital from 2019, predominantly in emergency and medical wards.
Susan always believed herself to be in good health, however following an unexpected personal injury in 2020, Susan began exploring the effects of inflammation due to poor nutrition (and lifestyle) on the body. A term she would later learn referred to as “meta-inflammation” – the low-grade chronic inflammation in the body over time that leads to states of chronic disease (Egger et al., 2017). Experiencing first-hand the transformation in health discovered through whole food plant-based eating and armed with her passion for combining food and health, Susan (whilst working full time as a nurse) applied her skills as a chef from “fine dining” to whole food plant-based delicious (quick and easy) cuisine and attended the “T. Collin Campbell eCornell Whole Food Plant Based Nutrition” Studies in 2022.
Though Australians are living longer, over 91% are living with non-communicable chronic conditions (AIHW, 2024). There is a plethora of evidence now identifying modifiable lifestyle risks factors to many chronic conditions including coronary heart, diabetes and cancer (AIHW, 2016). It is for this reason Susan saw need to address this area of health, becoming a practitioner with a master’s degree in Lifestyle Medicine and now a Fellow of the Australasian Lifestyle Medicine Association.
Susan combines her clinical experience with her passion for peer-reviewed evidence-based interventions for health promotion in a journey of practical, realistic lifestyle changes tailored specifically to the individuals needs and goals however small or great they may be.
